Bullshit!

Yesterday was our first weigh in day, and I say bullshit.

I've tried to eat healthy many times in the past but never stuck to it for more than a day or two, I get cravings and I give into them, this time was different. I stuck to this shit like white on rice, I ate what I was supposed to eat didn't snack on bad stuff, I even drank the required 8 cups of water a day and I hate water. The result? I lost a whole whopping 0.7lbs. Wow. My brother in law on the other hand, who other than having to eat a healthy dinner cause Kiki's sister is doing this as well lost 5lbs. So the guy who drinks 2-3 cans of coke a day, eats chips, chocolate bars and snack cakes on a daily basis lost more than me. Fucking wonderful.

Day 4

Yesterday was a bad bad day. All I wanted to do was snack on anything and everything...but I refrained, GO ME! I made a yummy quick chicken curry for dinner. Neil and I loved it but sadly Haley said it looked like poop and refused to eat it. She did however eat plain chicken breast and brown rice which in the end is healthier than our meal so that was a victory too.

Chicken Curry
serves 2

2tsp olive oil
1 onion, chopped
1tbsp flour
1 tbsp curry powder
1/2 cup low-sodium chicken stock
1/2 cup unsweetened apple sauce
1 apple, cored and diced
2 tbsp raisins
1 1/2 cups cubed cooked skinless chicken breast
1/4 cup skim milk
2 cups hot cooked brown rice

Heat oil in a non stick pan. Add onion and cook until softened. Add the flour and curry powder and stir for about 1min. Add the broth, applesauce, apple and raisins; bring to a boil and simmer covered for 10min stirring often. Stir in the chicken and milk and cook about 3min until heated through. Serve on top of rice.

I survived day one. Yay.

Healthy eating and Neil have never really gone hand in hand, my idea of a nice light snack is a whole big bag of chips, I've never really been one to watch what I eat other than to watch it going into my mouth. This year will be different, this year I will eat healthy. I'm not concerened with my weight, but I have found myself feeling crappy recently I just don't feel healthy, I have little to no energy most of the time and I've been grumpier than usual, my goal for the year is just to be healthier.

Day one went pretty well, the only eating obstacles I had were having to eat breakfast and drinking 8 cups of water. I don't like water all that much I prefer to drink coffee and soft drinks, the coffee I can still do without sugar and cream, but it's still got yummy caffeine. I did however meet my nemisis, his name is fibre, this stuff is evil and should be outlawed, the things fibre does to your digestive system are on par with acts of war, I have yet to have any fibre so far on day 2 and my stomach is still grumbling about the evil that I put in it yesterday.

All in all it was a good day, I didn't miss the crap I usually eat and I was satisfied with the amount of food that I could eat, I will slowly get used to drinking copious amounts of water, my intestines will adjust to the excess fibre and I will survive days 2-365.

Day 1

I expected the first day to be atleast a little difficult but it went really smoothly. I made some of my fiber filled sweet potato soup.

Sweet potato soup

1 tbsp veg oil
2 cups of onion, diced
3 cups of carrots, diced
5 cups of sweet potato, diced
1 1/2 tetra cartons of low sodium chicken stock
1 can non-fat evaporated milk

sweat the onions in the oil until translucent then add everything except the milk. Simmer until the vegetables are tender. Puree the mixture then add the milk for an added creaminess.

I also made some chocolate muffins that I'm thrilled to say Haley LOVES!

Chocolate muffins

1pkg Betty Crocker lowfat Brownie mix
3 cups All Bran
3 cups water
3 tsp baking powder
2 tsp cocoa

Soak All Bran in the water for 5min. Mix all ingredients together. seperate batter into 24 muffin cups and bake in a 350 oven for 20-25min.

Neil just lurves all the added fiber bahahaha. I'll let him come and tell you all about it.

Neil and I will be following Weight Watchers with a couple of additional rules.

Start date: Jan 4th

Rule 1. the obvious: don't go over points targets
Rule 2. Try one new recipe a week
Rule 3. eat one vegetarian meal a week
Rule 4. eat one fish dish a week (canned tuna does not count )
Rule 5. try one new food a month


Reward: a weekend family getaway
